This miso butter salmon is a tasty dinner with soft salmon pieces covered in a tasty mix of miso paste, butter, and honey. It’s really simple to cook in an air fryer or oven in just 20 minutes!

A few years ago, while I was in Tokyo, I had a salmon dish that was so good I couldnât stop thinking about it.
The flavor was amazing, but I couldnât remember the name. Now I know itâs called Sake no Misozuke.
It wasnât until I was eating miso soup at a Japanese restaurant back home that I realized what that flavor was.
I bought some miso paste and started making miso soup with mushrooms and vegetables. But I found out that miso can be used in many ways besides soup.
This miso butter salmon is my version of that Japanese dish I loved.
I enjoy using miso in lots of recipes, like this one and my miso roasted sweet potatoes.
Why youâll love this
Tasty.
The butter mix has a great mix of salty, sweet, and savory umami flavors.
Healthy.
Salmon is a super food with lots of protein, omega-3s, vitamins, and minerals.Miso is also a complete protein with good probiotics and minerals.Even though miso is salty, we only use a little bit here.
Easy and fast.
This recipe takes just 20 minutes and uses simple ingredients.Perfect for a quick dinner on a busy weeknight!
Ingredient notes
All the measurements and instructions are in the printable recipe card at the bottom of this post.
Salmon.
My favorite is wild sockeye salmon, but any kind works well.I like to use skin-on salmon fillets because the skin gets nice and crispy when cooked. You can also use skinless fillets if you prefer.
Miso Paste.
There are different types of miso.I tested this recipe with white miso (Shiro miso), which is mild and slightly sweet. It worked well, but I wanted more flavor. Then I tried red miso (Aka miso), which has a stronger, deeper taste.I definitely prefer red miso for the salmon glaze. If you’re new to cooking with miso, start with white miso, or try yellow miso (Shinshu miso), which is between white and red in flavor. If you can’t find miso paste in your local store, you can find it at Asian grocery stores or online.
Butter.
Since red miso is saltier, I use unsalted butter for the miso butter sauce. The butter should be softened.
Honey.
The sweetness of honey helps balance the strong, savory flavor of the miso. You can also use brown sugar or agave syrup instead.I donât recommend maple syrup for this recipe.
Lemon juice.
Garlic.

- If you’re cooking for someone who likesspice, add a ½teaspoon of redpepperflakes to the misobutter. You can alsoadd a teaspoon of gratedginger or a halfteaspoon of dried something else.
- This recipe is gluten–free because the misopaste I use is made from rice.
- Miso is a fermentedsoybeanpaste that usuallyhas a grain like rice or millet. If you needgluten–freemiso, check the label for wheat.Don’t usemugimiso, which is made with barley and isn’t gluten–free.
